Kaatuyanam? Some of us may not heard about the name..(maybe most of us?)

Cuz, today youngsters has forgot most of the traditional food followed by the our ancestors and has already begun eating beef burgers and ham pizzas.

Many people thinks that rice is the founder of lifestyle diseases like diabetes. But it’s not! It is not the rice we eat but the type matters the most.

In today’s article, I am going to tell something new about kaatuyanam. That sounds weird right?

Well, the height of the trees is enough to hide an elephant behind it. That’s why it is called kaatuyanam. This is one of the rice varieties grown in many parts of South India especially Tamilnadu.

Nature and Taste

The duration required to yield is 125-130 days. It is also called parboiled rice. The red coloured kernal due to the presence of anthocyanins like apigenin, myrecetin and quercetin and  bran.

It is usually unhulled or partially hulled and the husk is red in colour. It has nutty flavour when consumed. How to cook this? I will surely mention some delicious healthy recipes I come upon.

They are deeply pigmented and contains an impressive array of nutrients and plant compounds. This red rice is higher in protein and fiber content(both soluble and insoluble) and a rich source of antioxidants.

Health Benefits of Kaatuyanam Arisi

1. High Fiber Content

It is probably well known to prevent or relieve constipation. It contains both soluble and insoluble fibre.

Soluble fibre-it dissolves in water to form a gel like material. It lowers blood glucose and cholesterol levels.

Insoluble fibre– It promotes the movement of materials through the digestive system. It increases stool bulk to relieve constipation for those who are struggling for passing stools. It normalises bowel movement and maintain bowel health.

2. Source Of Vitamin B

It helps to keep the cells and nerves healthy. It makes DNA, the genetic material of the cells. It prevents folic acid and vitamin b12 deficiency (megaloblastic) anaemia.

3. Ideal For Diabetes

Kaatuyanam arisi is called the enemy of diabetes. It is a really low glycemic index food. The glycemic index is a measurement of a carbohydrate containing food raises blood sugar in our body.

The kaatuyanam decreases the glucose breakdown in our body that reducing or preventing diabetes.

4. Ideal Source Of Manganese, Zinc and Iron

It helps with amino acid digestion and utilisation. It contributes to many bodily functions like glucose, cholesterol and carbohydrates. It plays an important role in bone formation and bone clotting.

Iron is important component of haemoglobin which helps in the formation of red blood cells which plays an important role in the transportation of O2 from the lungs to other parts of the body.

It helps to reduce the risk of iron deficiency anaemia. The zinc plays an important role in invading virus and bacteria and boost our immune system.

5. Delays Skin Aging

The anthocyanins content in kaatuyanam arisi delays aging and wrinkles,frekles, pigmentation etc.

How to cook kaatuyanam arisi?

  • Add 3 cup of water to one cup of rice.
  • Wait for 6 to 8 whistles in a pressure cooker.
  • Sim gas stove for 15 minutes and serve hot.

Kaatuyanam Cone Dosai

Ingredients:

  • Katyaanam rice 1 cup
  • Urad dal 1/3
  • Fenugreek 10 grams

Method:

  • Wash and soak the rice both katyaanum and urad dal separately for 4 to 5 hours.
  • Soak fenugreek seeds along with urad dal.
  • Grind them to make batter and leave it for a time for fermentation for 5-6 hours.
  • Now the batter is ready.
  • Heat the pan and apply oil on it.
  • After the pan has heated simmer the stove a little and start to spread the batter thinly in a circular motion.
  • Close the pan using lid.
  • Open them while the outer crust idms brown in colour.
  • Your easiest healthy dosas is ready ! Serve it with your favourite chutney!
